 It seems to me (and others I suppose) that I may have given up on blogging altogether, it’s not the case I just needed a really long break over the Summer Holidays. We get a long three months here and two demanding little ones plus everything else and something had to give and it was the blogging that went out of the window temporarily.

Any how, I have been baking and recording some recipes and this one was a big hit with Ollie. Levi is at the point where we can try him with banana soon so maybe he can try one of these yummy babies out really soon too. These are  great for Breakfast, lunchbox or just with a nice cuppa. mmmmmm

Banana and Cinnamon Oat Muffins

  • 170 g plain flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tsp cinnamon
  • 1/2 teaspoon salt
  • 2 big bananas, mashed (remember the blacker the skins the better.)
  • 115 g white sugar
  • 50 g light brown sugar
  • 80 ml sunflower oil
  • 125 ml apple puree

Preheat oven to 180 c

 Mash the bananas until there are no big lumps, then simply add all the other ingredients and stir until combined. Spoon into muffin cases to almost full then make the topping…

Topping

  • 50g porridge oats
  • tsp cinnamon
  • 1 tbsp light brown sugar

Mix topping ingredients in a small bowl and sprinkle a little onto the uncooked muffins. Place into the oven and cook until brown and risen. About 10/15 minutes. The smell that wafts from your oven is banana gorgeousness!
