Shocking I know, but yes we really do eat savoury things here! Lately I have been experimenting with a chicken nugget type recipe that Levi can have but that is still tasty and appealing to my other toddler Ollie. The Chicken and Apricot Bites are really simple and tasty; you could always coat them in breadcrumbs if you like to make them look more traditional.
Chicken and Apricot Bites
For a more flavoursome adult alternative add a tsp of chilli powder and some chopped coriander and shape into burgers then eat in bun with salad and sweet chilli sauce. Yum. Great for the BBQ.
Makes 4 or 5 burgers and lots of little nuggets.
- 4 Chicken breasts, diced roughly (or use chicken mince)
- 6 dried apricots (soak in boiling water for 5 mins to soften then cut into small pieces)
- the green end of 2 spring onions, chopped up small
- 2 tbsp of apple puree
- 100g fresh breadcrumbs (I used brown bread)
- ½ tsp paprika
- ½ tsp salt (optional)
- pepper
Put all the ingredients into a food processor and blitz until combined. If you are using mince then you could mix it up by hand.
Either wrap in cling film or put into a freezer bag and place in the fridge for at least an hour.
Once firm shape into the shape and size you require and cook over a medium high heat on a frying pan wiped with sunflower (or other) oil. Serve with ketchup.
Hello I was just having a look though your recipes and I was wondering if this recipe would work with faux chicken instead of actual meat? Would faux chicken nuggets blended instead still work?
