I came up with this recipe so that Ollie could have a sweet treat in his lunchbox every now and then but with a little goodness in too. I had no rice milk in the house at the time so found a recipe online and set about making some, it was shockingly easy, do try it. I only had white rice so used that but it turned out great anyhow.

Courgette, Carrot and Apple Muffins

Raisins or nuts could be added if you like.

Wet mix;

  • 8 oz light brown sugar
  • ½ pint/ 250ml milk (I used rice milk but you can use normal, soya or even coconut)
  • ¼ pint/ 125ml sunflower oil
  • 1 tsp vanilla extract
  • 1 tbsp white vinegar
  • 4 oz grated courgette
  • 2 oz grated carrot
  • 2 oz grate apple

Dry mix;

  • 10 oz self raising flour
  • 1 tsp bicarbonate of soda
  • ½ tsp salt
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • ½ tsp mixed spice

 Preheat the oven to 180 c.

Add wet to dry mix and stir gently until combined. Fill muffin cases almost to the top and bake for about 20 to 25 minutes until nicely browned. I didn’t ice these but a thin drizzle of icing sugar mixed with orange juice would work well.
