I made these a few weeks back but have been rather slow with getting things written up lately so sorry for those who were after the recipe. I also misplaced the scrap of paper I had scribbled the recipe on and just had to frantically search through numerous bags to find it again.
I really love those chocolate crinkle cookies with the icing sugar coating that cracks when baking so i sort of went with a variation on that theme. I mixed orange zest with sugar to make a scented sugar that I hoped would result in a crunchy coating once baked.
Below is the recipe;
Chocolate Orange Crunch Cookies
Set your oven to 170c
For the sugar coating combine;
- 60g white sugar
- Finely grated zest one medium orange
Mix and set aside
For the cookie dough combine;
- 175g white sugar
- 100g dairy free margarine
- 25g cocoa
- Finely grated zest one orange
Once the above ingredients are combined mix and gradually add flour and salt until a dough is formed;
- 1/4 tsp salt
- 150g plain flour
Roll the dough into balls and coat in the sugar.
Put onto greaseproof paper on a oven tray and flatten slightly.
Bake in the oven for 10 to 12 minutes, no longer than 12. Leave to cool on the tray for a few minutes before transferring to a rack.
