Probably not the most extraordinary looking muffins you’ve ever seen but these muffins were delicious. Really I just wanted an excuse to use some nectarines that were quite ripe and heading toward composting given a few more days, but we all loved them so much I will definitely be making them again. These muffins would make a great addition to a packed lunch, not entirely healthy but better perhaps than a chocolate bar….. and hey they have fruit and marmalade in so you could have them for breakfast too! 😉
Nectarine and Orange Muffins
Take two bowls. In one bowl mix the “Dry Mix”;
- 300g plain flour
- 1 tsp bicarb of soda
- ½ tsp baking powder
- ½ tsp salt
In the other bowl whisk together “Wet Mix”;
- 100g dairy free margarine (like Pure) , very soft or melted
- 2 tbsp sunflower oil
- 75g light brown sugar
- 125g white sugar
- 150g marmalade
- 250g chopped nectarines (about 3)
- 125ml rice milk
Oven @ 180 c
Make a hollow in the dry mix and gradually mix the wet mix into this until everything I combined. Spoon this into cupcake cases about ¾ high. Bake in the centre of the oven for about 12-15 minutes until golden. When you put a knife into them it will come out clean. Leave to cool completely before icing.
15 to 20 minutes until golden.
Lovely with a cuppa tea.
