I really enjoy warm spices like ginger and cinnamon at this time of year when it’s starting to be icy and cold outside and I was craving a lovely slice of soft gingerbread cake with my cup of tea. I came up with quite a simple recipe and I am sure you can tweak it to your own liking. You could use a different syrup or even honey, you could use half golden syrup and half black treacle, swap the dark brown sugar for light brown etc etc. Play with it, tell me if you find a delicious variation of your own.
Next time I make this cake I am going to also add the zest of an orange and a sticky orange drizzle icing. Enjoy;
